Gammon & Sausage Paella


Gammon & Sausage Paella (takes 30 mins serves 4)
This one-pot meal is colourful and comforting.

  • 1 tbsp olive oil
  • 1 onion, peeled and roughly chopped
  • 2 garlic cloves, squashed
  • 225g smoked gammon steak, fat removed and cut into cubes
  • 2 spicy pork sausages, thickly sliced
  • 1 tsp smoked paprika
  • 300g short grain paella rice
  • Pinch saffron, infused in a little water
  • 1.1 ltr pork stock
  • Salt and freshly ground black pepper
  • 1 orange pepper, deseeded and chopped
  • 225g green beans, tails removed

  1. Heat the olive oil in a large shallow pan. Add the onion and garlic, and cook until starting to soften. Add the the gammon and sausage, and continue to cook until browned.
  2. Add the paprika and paella rice. Cook, stirring, for 1-2 mins. Add the saffron in water and 1/2 the stock, season with salt and freshly ground black pepper and stir well.
  3. add the pepper and beans. Bring to the boil and simmer for 20 mins. Add more stock as it becomes absorb, stir and then leave to absorb the flavours. Serve as soon as the rice is tender and the liquid has been absorbed.
