Sardine Spaghetti with Sultanas & Pine Nuts
TAKES 15 MINS SERVES 2 
Sardines are cheap and easy to prepare, but so full of flavour. 

  • 150g spaghetti
  • 135g can of Parmentier Sardines Selection a l'huile d'olive
  • 1 garlic clove, finely chopped
  • 2 tbsp sultanas
  • 2 tbsp toasted pine nuts
  • 2 tbsp chives, snipped
  • A squeeze of lemon juice
  • Freshly ground black pepper
  • Rocket salad, to serve


  1. Cook the spaghetti in a pan of boiling water for 10 mins, or according to packet instructions.
  2. Meanwhile, open the sardines and tip some of the oil into a small pan. Add the garlic and cook for 2 mins, until softened but not coloured.
  3. Add the sardines to the pan, breaking them up with a wooden spoon. Stir in a ladleful of he pasta cooking water, along with the sultanas and pine nuts, and cook for 2-3 mins, until the sardines are heated through.
  4. Drain the spaghetti and return to the pan, off the heat. Add the sardine mixture, chives and lemon juice. Divide between warmed bowls, top with freshly ground black pepper and serve with a rocket salad on the side.
