Watermelon mojito


Watermelon mojito  MAKES 1 COCKTAIL

We have a soft spot for mojitos, especially after traveling to Cuba, where they were a daily staple for our gang. While in Cuba, we soaked up the whole culture of mojitos, including how to make them. After finally getting a watermelon seedling to take off in our garden, we had a wheelbarrow full of the green-skinned, red-fleshed behemoths to play with, and we came up with this variation on the mojito. The trio of fresh watermelon, mint, and rum makes one of the most refreshing summer cocktails imaginable. It also works great by the pitcher for summertime gatherings: Muddle the watermelon and mint, then combine everything except the soda water in a pitcher. Serve over ice, with the soda water on the side.




INGREDIENTS

  • 4 (1-inch / 2.5-cm) cubes watermelon (rind and seeds removed)
  • 6 mint leaves, torn into small pieces
  • 1 ounce fresh lime juice
  • 1 ounce Simple Syrup
  • 1 1/2 ounces light rum
  • Ice
  • 4 ounces soda water

DIRECTIONS

  1. In a small bowl or bartender’s glass, muddle together the watermelon and mint leaves until the mixture reaches your preferred texture. Stir in the lime juice, simple syrup, and rum.
  2. Place the ice in a highball glass and pour the mixture into the glass. Slowly add the soda water and gently mix.
