Cucumber-Lime Cooler


Cucumber-Lime Cooler
This super-refreshing drink is an unexpected and delightful way to use up extra cucumbers. Reminiscent of a Mexican aqua fresca, the cooler is highly adaptable. Honeydew, 
cantaloupe, or watermelon would be a delicious companion to the cucumber, and other 
herbs such as cilantro, lovage, or parsley can team up with the mint.  

Serves 2

1 large cucumber, chilled, peeled, 
seeded, and coarsely chopped
1⁄2cup fresh lime juice, chilled
3 tablespoons honey or stevia; more as needed
6 large fresh mint leaves
10 ice cubes
2 lime wedges, for garnish


Put the cucumber in a food processor or blender with the lime juice, honey, and mint. Add the ice cubes and process until smooth, adding a little water if needed to get the right consistency. Pour into chilled glasses, garnish with the lime wedges, and serve immediately.
