Salty chocolate chip cookies (makes 24)
120g butter, at room temperature
70g caster sugar
70g golden brown sugar
1 jumbo egg, beaten
1/2 tsp vanilla extract
150g flour
1/4 tsp bicarbonate of soda
1 tsp sea salt
2 x 100g bars salted chocolate, cut into chunks
- Preheat oven to 190°C. Cream butter, caster sugar and brown sugar with a hand-held electric beater until light and fluffy.
- Add the egg and vanilla extract and beat well.
- sift in the flour and bicarb and add the sea salt. Stir to combine.
- Fold through chocolate chunks.
- Drop small mounds of batter onto a greased and lined baking sheet at 5cm intervals, as the biscuits spread as they bake.
- bake for 10 minutes or until golden brown. Transfer to a wire cooling rack and leave to cool.
