Salty chocolate chip cookies


Salty chocolate chip cookies (makes 24)

120g butter, at room temperature
70g caster sugar
70g golden brown sugar
1 jumbo egg, beaten
1/2 tsp vanilla extract
150g flour
1/4 tsp bicarbonate of soda 
1 tsp sea salt
2 x 100g bars salted chocolate, cut into chunks

  1. Preheat oven to 190°C. Cream butter, caster sugar and brown sugar with a hand-held electric beater until light and fluffy.
  2. Add the egg and vanilla extract and beat well.
  3. sift in the flour and bicarb and add the sea salt. Stir to combine.
  4. Fold through chocolate chunks.
  5. Drop small mounds of  batter onto a greased and lined baking sheet at 5cm intervals, as the biscuits spread as they bake.
  6. bake for 10 minutes or until golden brown. Transfer to a wire cooling rack and leave to cool.
