Peanut Noodles


Peanut Noodles

  •  8  ounces spaghetti
  •  2  tablespoons  sesame oil [Toasted sesame oil, sometimes called dark sesame oil, will be more robust.]
  •  1  bunch green onions, sliced (white parts only)
  •  1  teaspoon minced fresh ginger
  •  1⁄3  cup creamy peanut butter
  •  1⁄4  cup soy sauce
  •  1⁄4  cup hot water
  •  1  tablespoon cider vinegar
  •  1  teaspoon sugar
  •  1⁄4  teaspoon crushed red pepper fakes

  1. Cook spaghetti in a large pot of boiling water until al dente. Drain.
  2. Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes. Increase heat to medium-low; mix in peanut butter, soy sauce, water, vinegar, sugar, and pepper. Remove from heat.
  3. Toss spaghetti with sauce.
