Peanut Noodles
- 8 ounces spaghetti
- 2 tablespoons sesame oil [Toasted sesame oil, sometimes called dark sesame oil, will be more robust.]
- 1 bunch green onions, sliced (white parts only)
- 1 teaspoon minced fresh ginger
- 1⁄3 cup creamy peanut butter
- 1⁄4 cup soy sauce
- 1⁄4 cup hot water
- 1 tablespoon cider vinegar
- 1 teaspoon sugar
- 1⁄4 teaspoon crushed red pepper fakes
- Cook spaghetti in a large pot of boiling water until al dente. Drain.
- Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring, for 1 to 2 minutes. Increase heat to medium-low; mix in peanut butter, soy sauce, water, vinegar, sugar, and pepper. Remove from heat.
- Toss spaghetti with sauce.
