Chocolate pistachio loaf ( serves 6-8 )
100g butter
200g dark chocolate
200g demerara sugar
4 jumbo eggs
200g flour
1 tsp baking powder
Pinch of salt
100g chopped pistachios
50g dark chocolate, melted
Cocoa for dusting
Cape goosberries to garnish
1. Preheat oven to 160°C. Melt butter and chocolate in a bowl over a pot of simmering water. Leave to cool slightly, then stir in sugar , beat in eggs, sift in flour, baking powder and salt. Stir through pistachios.
2. Place mixture in a greased loaf tin, bake for 25 min. Remove from oven, allow to cool. Remove loaf from tin.
3. To serve: Drizzle with melted chocolate, dust with cocoa and garnish with goosberries.
