Chocolate, pear & cranberrry slice ( makes 1 loaf )
- 225g caster sugar
- 110g butter
- 2 jumbo eggs
- 1 tsp vanilla essence
- 250g self-raising flour
- Pinch of salt2 pears
- 200g dark chocolate, chopped
- 100g dried cranberries
- FOR THE GLACE ICING
- 125g icing sugar, sifted
- 2 tbsp hot water
- Preheat oven to 180°C. In a bowl beat sugar and butter together until light and fluffy, using a hand -held electric beater. Add the eggs one at a time, beating well after each addition, and stir in the vanilla essence. Sift in the flour and salt and stir well to combine.
- Peel and core pears and cut into chunks. Stir into batter with chocolate chips and cranberries.
- Spoon batter into a greased and lined loaf tin and bake for 30 minutes or until a skewer comes out clean. To make the glacé icing, combine icing sugar and hot water. Whisk until smooth. Drizzle icing over the cooled loaf, slice and serve.
