Chocolate, pear & cranberry slice


Chocolate, pear & cranberrry slice ( makes 1 loaf )

  • 225g caster sugar
  • 110g butter
  • 2 jumbo eggs
  • 1 tsp vanilla essence
  • 250g self-raising flour
  • Pinch of salt2 pears
  • 200g dark chocolate, chopped
  • 100g dried cranberries

  • FOR THE GLACE ICING
  • 125g icing sugar, sifted
  • 2 tbsp hot water

  1. Preheat oven to 180°C. In a bowl beat sugar and butter together until light and fluffy, using a hand -held electric beater. Add the eggs one at a time, beating well after each addition, and stir in the vanilla essence. Sift in the flour and salt and stir well to combine.
  2. Peel and core pears and cut into chunks. Stir into batter with chocolate chips and cranberries.
  3. Spoon batter into a greased and lined loaf tin and bake for 30 minutes or until a skewer comes out clean. To make the glacé icing, combine icing sugar and hot water. Whisk until smooth. Drizzle icing over the cooled loaf, slice and serve.
